Christmas 046As its valentines day I thought it fitting to do a recipe with a heart theme, these jam tarts are really quick and easy to make yet perfectly yummy, whether you make them for your love, your family, friends or neighbours you’ll definitely want to make more.

Ingredients

  • 150g/5oz butter (cut into pieces)
  • 225g/8oz plain flour
  • 50g/2oz ground almonds
  • 25g/1oz caster sugar
  • 1 egg yolk
  • 1 tablespoon of water
  • Large jar of Jam, strawberry is the traditional choice but something darker like blackcurrant is just as yummy/pretty)
  • Heart shaped cutter and a cup to cut the bottoms
  • a non stick 12 tart tin

Here is what you do…

  1. Preheat the oven to 200C/400F/Gas mark 6. Rub the butter into the flour. Add the almonds, sugar, egg yolk & water and mix to form a firm dough.
  2. Knead briefly on a floured surface, then wrap and chill for 30 mins. Roll out thinkly and stamp out 12 rounds (about 7.5 cm/3 inch, this is where the cup comes in), plus your 12 hearts for the tops.
  3. Open your jar of jam and spoon generously into the bottoms, then put your hearts on top and brush with the egg yolk on top & round the sides .
  4. Bake for 20 mins until golden brown, leave to cool (molten jam is never good) and enjoy.
